Baked Brie

Fact: you can’t go wrong with baked brie. It’s one of my favorite appetizers to make and it’s always a hit! The best part? You only need four ingredients and it doesn’t take much time. This recipe uses puff pastry sheets and whatever jam/preserve you prefer. A triple berry is typically my favorite! My mother-in-law makes a lot of jam, so we usually have some homemade jars in our pantry. For our wedding favors she made a crabapple flavor, which we canned into small jars and I decorated to match our rustic-chic theme (pictured below). You can see more of our wedding photos here! The leftover jams had been sitting in our pantry forever, but 3.5 years later I finally decided to toss them. Didn’t realize the shelf life was only about two years… oops!

This recipe is great when hosting a party, book club, etc. because it only takes a few minutes to prep. You can leave the rind on the Brie or use a cheese slicer to remove some of it—your preference! Then slightly roll out the thawed puff pastry and put the jam in the middle. Top with the cheese and then fold in the corners to create a neat package. Gently press the edges together to create smooth sides. This also helps the jam from oozing out while baking. Flip over and place on a baking sheet lined with parchment paper or a Silpat mat. Next we’ll use an egg wash to get that shiny, golden crust. Whisk the egg and water in a small bowl and then brush over the puff pastry. Now you just bake and wait! It usually takes 20 – 25 to be perfectly browned. It’s not the prettiest appetizer, but as soon as you cut into it the guests won’t stop indulging! If you do have leftovers (which is unlikely…) you can refrigerate and reheat in the oven. To do so, I like to create a little boat with foil and bake on a cookie sheet at 350º for about 10 minutes until the cheese is warm and melty. Enjoy!

Baked Brie

There's nothing better than ooey gooey baked brie made with puff pastry and your favorite jam or preserve! This appetizer is always a hit and super easy to make.

Ingredients

  • 8 oz. Brie cheese rind on or partially removed
  • 1 Puff pastry sheet thawed
  • 1/4 cup jam or preserve
  • 1 egg
  • 1 Tbsp. water

Instructions

  1. Preheat oven to 425º F. Line baking sheet with parchment paper and set aside.

  2. Spread out the puff pastry and place the jam in the middle. Top with brie cheese. Fold the puff pastry corners over the brie, so that it's neatly wrapped. Gently press the edges together to smooth down the sides. Flip and place on prepared baking sheet. 

  3. Whisk the egg and water in a small ball then brush over the puff pastry until lightly coated (you won't use all of the mixture). 

  4. Bake for 20 – 25 minutes, until puff pastry is golden. Let cool for a few minutes, then transfer to serving plate or tray. Enjoy immediately. Serve with crackers. Although I also like to eat it by itself :)
