Is there anything better than a weekend with zero plans? I love being able to sleep in and then just be lazy until I figure out what I feel like doing that day. Luckily my husband Rob enjoys this, too. I can’t imagine having a husband who wakes up at the crack of dawn and wants to go for a hike or something. That’s just not my lifestyle haha. We enjoy waking up without an alarm and then making a delicious breakfast. One of our go-to recipes is biscuits with green chile sausage gravy. My love for green chile dishes began when I was visiting Rob in New Mexico (he was there for an Air Force training for 4 months so I went to visit while I was still living in Seattle). They put green chiles in everything down there and it’s AMAZING! We ordered biscuits with green chile sausage gravy at a restaurant called Crave in El Paso, which were unreal! Since we loved it so much we decided to recreate it at home. It’s a really easy recipe, especially since we use Bisquick mix for the biscuits and a peppered gravy mix that only requires water. Then you just cook up some sausage (we’ve used both beef and antelope) and add green chiles (these Mezzetta green chili peppers are our favorite!). It’s quick, easy and the ultimate comfort food breakfast!

Biscuits with Green Chile Sausage Gravy

Ingredients

  • 2 1/4 cups original Bisquick mix
  • 2/3 cup milk
  • 1 packet (2.75 oz.) Peppered Gravy Mix
  • 2 cups water, divided
  • 1 lb. breakfast sausage cooked
  • 4 oz. green chiles

Instructions

  1. Preheat oven to 450F. 

  2. In a medium-sized bowl, stir Bisquick mix and milk together until soft dough forms. Drop dough by spoonfuls onto ungreased baking sheet. We usually get 5 biscuits. Bake for 8 – 10 minutes until golden brown.

  3. While the biscuits are baking, prepare gravy according to directions on the package. We use Pioneer peppered gravy mix, which says to bring 1 1/2 cups water to a full rolling boil in a large saucepan. In a liquid measuring cup, whisk peppered gravy mix with 1/2 cup cold water until lumps disappear. When the saucepan of water starts to boil, pour in the gravy mixture and whisk vigorously until thickened. Remove from heat and add cooked sausage and green chiles. 

  4.  Serve gravy over cooked biscuits. This usually makes enough for 3 – 5 people depending on the preferred serving size.
