Oatmeal Bars with Chocolate Filling

It was a rainy, gray day in the Pacific Northwest. One of those days that you just want to lounge at home in your sweats and make some warm, comforting food. That is exactly what I did. While relaxing at my parents house in Mill Creek I enjoyed the company of my mom and two dogs while baking this ooey-gooey chocolate-y treat. These chocolate oatmeal bars will definitely brighten up a gloomy day!

Chocolate Oatmeal Bars

Ingredients

For the Oat Bars

  • 1 cup butter room temperature
  • 2 cups light brown sugar
  • 2 large eggs
  • 2 tsp. pure vanilla extract
  • 1/3 cup milk
  • 2 1/2 cups flour
  • 1 tsp. baking soda
  • 1 tsp. salt
  • 3 cups old fashioned oats

For the Chocolate Filling

  • 1 can (14 oz.) sweetened condensed milk
  • 2 cups semi-sweet chocolate chips
  • 1/3 cup butter

Instructions

  1. Preheat oven to 350F and grease 9" × 13" pan with cooking spray.

  2. In a large mixing bowl (or the bowl of a standing mixer fitted with the paddle attachment) stir together butter, eggs and brown sugar. Add vanilla and milk, stir until combined. 

  3. In a separate large mixing bowl, whisk together flour, baking soda and salt. Gradually add to butter mixture and stir until combined. Stir in the oats until evenly distributed. Spread 3/4 of the mixture into the prepared pan (the remainder will be put on top of the chocolate layer).

  4. To make the chocolate filling, melt sweetened condensed milk, chocolate chips and butter in a saucepan over medium heat, stirring continuously. 

  5. Spread over the oat layer.Place the remaining dough on top of the chocolate. I flattened small amounts and placed it on top of the chocolate layer until it was almost covered. Bake for 25 minutes (cover with foil if the top begins to brown too quickly). 

  6. Let cool then cut into bars.  I’m all about eating cookies while they are hot, but these ones are ever better–and easier to cut–once they’re cool.
