Fig Oatmeal Bars

I had some fig butter left over after making this brie grilled cheese, so I decided to use it to make a dessert this time. My mom makes delicious oatmeal jelly bars, so I used her recipe to make this sweet treat. I took them to work and I had a few co-workers rationalized that they are healthy(ish)! Oatmeal is good for you and fig is a fruit, so voilá! Okay, so they might not be made with kale and quinoa, but it could be worse, right? Enjoy!

Fig Oatmeal Bars

Ingredients

  • 2 cups rolled oats
  • 1 cup flour
  • 3/4 cup brown sugar
  • 3/4 cup shortening
  • 1 cup fig butter (or preferred jelly)

Directions

  1. Lightly grease an 8×8 or 9×9 baking dish. Preheat oven to 350F.
  2. Add oats, flour, sugar, salt and shortening to a large mixing bowl. Use your fingertips to mix well, until combined. Place half of the mixture in the prepared pan and press down gently so that you have a solid base. Spread fig butter evenly over the dough. Sprinkle remaining dough over the fig butter, then lightly flatten with your fingertips.
  3. Bake for 25 – 30 minutes, until edges are set and golden brown. Cool in pan on a wire rack.
