Flourless Peanut Butter Chocolate Chip Cookies
- 1 cup creamy peanut butter
- 1 cup light brown sugar
- 1 large egg
- 1 tsp. baking soda
- 1 tsp. pure vanilla extract
- semi-sweet chocolate chips
Preheat oven to 350F. Line baking sheet with parchment paper or silicone baking mat.
In a large mixing bowl, combine peanut butter, brown sugar, egg, baking soda and vanilla extract. Stir in chocolate chips.
Use a cookie scoop (about 1 tablespoon) and drop onto prepared baking sheet. Bake for 10 – 12 minutes. Transfer to wire rack to cool or enjoy warm.
