If you aren’t a fan of pumpkin spice items, don’t worry—this tasty treat just looks like a pumpkin. It may be green and orange, but it still has the same flavor and texture as a classic Rice Krispies treat. Have you heard of Jessica Siskin aka @mister_krisp? Well, she’s one of my favorite people to follow on Instagram because she makes basically anything out of Rice Krispies treats. I’m talking hamburgers, emojis, fidget spinners and so many other everyday objects (she shares 93 recipes in her book, which recently came out). Finally I decided to give these creative creations a try for myself!
For a simple starter project, I went with a giant pumpkin Rice Krispies treat since it’s timely and takes minimal skill. I started by making a regular sized batch and added orange food coloring to the butter/marshmallow mixture. Then I poured it onto a sheet of buttered foil (when working with Rice Krispies treats it’s important to butter or grease everything, including your hands and spatula so that they don’t stick). It was pretty easy to shape the pumpkin with my hands and then I used black icing to add the jack-o-lantern face. It’s best to practice on a paper towel or something to make sure you have the technique and design down before working on the actual treat!
To get the stem, I made an additional batch (about 1/3 of the size) with green food coloring. It didn’t take the entire batch to make the stem, but it never hurts to have leftovers to snack on! I used gel food coloring, so it’s hard to say exactly how much to use. I scoop some up with a toothpick and add it to the butter/marshmallow mixture, then add more if needed. It’s better to start with a small amount and work your way up since you can always add more, but can’t remove it.
This giant pumpkin Rice Krispies treat would be really fun to serve at a Halloween party! I suggest leaving it whole and then have a knife nearby for guests to cut off their own pieces. That way people can see that it in its entirety until it’s mostly eaten, which won’t take long!

- Spray a large mixing bowl with non-stick cooking spray. Add the Rice Krispies cereal and set aside.
- In a large sauce pan, melt the butter and then add orange food coloring. Stir until combined. Add marshmallows and stir with a rubber spatula. If this mixture isn't orange enough, add more food coloring until you reach the desired color. Remove from heat and pour over the cereal. Gently fold until cereal is fully coated.
- Place a sheet of foil on the counter and lightly coat with butter. Place cereal mixture on top and use your hands to shape it into the form of a pumpkin. Make sure to wash your hands, then butter them so that the cereal doesn't stick.
- Use black icing to decorate the jack-o-lantern face.
- Spray a medium-sized mixing bowl with non-stick cooking spray. Add the Rice Krispies cereal and set aside.
- In a large sauce pan (either wash the previously used pan or use a different one), melt the butter and then add green food coloring. Stir until combined. Add marshmallows and stir with a rubber spatula. If this mixture isn't green enough, add more food coloring until you reach the desired color. Remove from heat and pour over the cereal. Gently fold until cereal is fully coated.
- Use about 3/4 cup of the mixture to shape the stem and press into the top side of the pumpkin. You will have extra Rice Krispies left over, so press them into a buttered pan to snack on :)
