If you follow a few bakers on Instagram then chances are you’ve seen these salted butter and chocolate chunk shortbread cookies on your feed. The recipe from Alison Roman’s Dining In cookbook has basically gone viral in the baking community and for good reason! It’s so simple, but so genius! You make the chocolate chip cookie shortbread dough, roll it into a log, cover with cling wrap and let it harden in the fridge. Once it is solid (after about 2 hours) brush it with an egg wash and roll in Demerara sugar. Slice, bake and enjoy! Oh, and sprinkle with flaky sea salt. I love the salty and sweet combo! The edges are somewhat crisp and chewy because of the sugar and the middle is perfectly soft and filled with chocolate chunks. Seriously such a good combo! I would definitely make these again.
