Happy Monday! Hope everyone had a great weekend. Vegas has felt like an oven the past few days, so we stayed cool by having a relaxing weekend indoors. I tried out a few refreshing recipes, like a watermelon and feta salad on our Himalayan salt black. It was delicious and so easy to make! I was also craving a fruity chia water from LYFE Kitchen, but since that’s about 35 minutes away I decided to make a copycat version. The orange ginger flavor is my favorite—it’s thirst quenching and also has nutritional value with the fresh fruit juice, ginger, H2O and chia seeds. Chia seeds are a staple in our pantry (we usually put them in smoothies or Greek yogurt). It’s an easy way to add some fiber, omega-3s, protein and antioxidants to your diet. We drink A LOT of water when it’s this hot, so this was a tasty way to add some variety.
Orange Ginger Chia Water
Makes 6 glasses
Ingredients
- 8 cups water
- 1 piece ginger root (about 3″ – 4″), peeled
- 2 oranges, juiced (or favorite store-bought orange juice)
- 6 tsp. chia seeds
- 2 limes, juiced
- Mint leaves and strawberries to garnish
Directions
- First up is infusing the water with ginger. Slice the ginger into thin disks and place into a pitcher with the water. Let it sit overnight or at least a few hours depending on how strong you want the ginger flavor to be.
- Use a mesh strainer to pour infused water into an extra pitcher (or a bowl and then rinse the pitcher and add the infused water back in).
- Add orange and lime juice to the infused water. Stir and either store in the refrigerator or serve immediately.
- When you’re ready to serve, add 1 tsp. of chia seeds to the bottom of each glass. Add desired amount of ice and then fill the glass with infused water. Toss in a few mint leaves or strawberry slices to add some extra flavor/color. Enjoy!
