I LOVE this time of year because there are patriotic decorations and foods everywhere! It’s a true sign that summer is here! For Memorial Day I made some red, white and blue Rice Krispies treats to bring to a friend that was in town. I made two variations: one with freeze dried berries topped with white chocolate, and another with s’mores M&M’s. Both looked very festive and took the basic recipe up a notch! I love that Rice Krispies treats can easily be customized for different holidays or events (like this Lucky Charms version or these brown butter toffee treats). The recipe always stays the same, except you can substitute or add different ingredients. Plus you can just eyeball it since the no-bake recipe isn’t a science. I usually brown the butter, too, because it adds a more unique, nutty flavor. What are some of your favorite Rice Krispies treats variations?

Brown Butter Berry Rice Krispies 

Ingredients

  • 6 Tbsp. unsalted butter
  • 1 bag (10.5 oz.) mini marshmallows
  • 1 1/2 cups freeze dried berries (I used this mix), chop the larger pieces
  • 5 cups Rice Krispies cereal
  • 3 oz. white chocolate chips or melting wafers (I prefer Ghirardelli)

Directions:

  1. Line a 9″ x 9″ pan with foil and lightly spray with cooking oil. Set aside.
  2. In a large saucepan over medium heat, melt the butter, stirring constantly. Once it is a golden color with a nutty aroma (about 5 – 7 minutes), remove from heat and add the marshmallows, stirring until melted.
  3. Quickly mix in the Rice Krispies and freeze dried fruit. Gently toss until fully incorporated and then press mixture into the prepared pan using a spatula. Let cool.
  4. Once they are completely set (about 2 hours), melt the chocolate in the microwave stirring every 30 seconds, or as directed on package. Drizzle over the Rice Krispies, then cut into squares and serve.

S’mores M&M Rice Krispies

Ingredients

Directions:

  1. Line a 9″ x 9″ pan with foil and lightly spray with cooking oil. Set aside.
  2. In a large saucepan over medium heat, melt the butter, stirring constantly. Once it is a golden color with a nutty aroma (about 5 – 7 minutes), remove from heat and add the marshmallows, stirring until melted.
  3. Quickly mix in the Rice Krispies and stir until coated. Let cool for a minute or tow, then add the M&M’s and gently toss until fully incorporated (if you add them while the mixture is right off the stove they will start to melt). Press mixture into the prepared pan using a spatula. Let cool completely, then cut into squares and serve.
