Merry Christmas Eve Eve! We have had such a fun time in Washington so far. My family picked us up at the airport Wednesday and took us straight to our usual restaurant in Mill Creek—Azul! There seriously is no place like home for the holidays. We have hit up some of my favorite spots like Frost (their maple bars are AMAZING), University Village for some Christmas shopping and Daniel’s Broiler for a festive dinner. And speaking of doughnuts, I made this recipe for baked peppermint doughnuts recently which would be perfect for Christmas morning! The baked cake doughnuts have a hint of peppermint and so does the glaze. Of course you have to sprinkle them with crushed candy canes, too! If you haven’t attempted homemade doughnuts before, they are surprisingly easy so no need to be intimidated by this recipe. You just need the right pans, but other than that the ingredients are pretty basic. Another option is to buy some cake doughnuts from your favorite bakery or grocery store, then make the homemade glaze. Don’t, worry I won’t tell ;) Hope you are all having a great holiday season!

Instructions
  1. Preheat oven to 350F. Spray two doughnut pans with baking spray.
  2. In a large bowl, whisk together the flour, sugar, baking powder and salt.
  3. In a small bowl, whisk together the egg, milk, melted butter and extracts. Add to dry ingredients and stir until combined.
  4. Spoon batter into baking pans, filling them each about three-quarters full. Bake for 15 – 18 minutes, until a toothpick comes out clean. Let cool for 5 minutes then transfer to cooling rack.
  5. To make the glaze, stir together the powdered sugar, heavy cream and extracts. Dip the doughnuts in the glaze them place back on cooling rack. Immediately sprinkle with crushed candy canes.
