How is Easter already this weekend!? If you are hosting a brunch or just want to make a sweet treat, these coffee cake muffins would be perfect! I’m a sucker for moist, cinnamon-y coffee cake and when it’s in muffin form I have a little bit more self control. If it’s more of a cake I will keep slicing off “little” slivers and eventually that adds up to like the entire pan. Oops! To add a nutty taste to these muffins I browned the butter for both the batter and the crumble. Browning the butter is pretty easy (here is a good tutorial) and I feel like it makes any recipe that much more unique and delicious. And sticking with the nutty flavor, I drizzled on a glaze that has almond and vanilla extract. I really like the texture and enhanced flavor that it adds. It would for sure be an Easter brunch hit, especially with the bunny cupcake liners! The pink gingham caught my eye when I was at Michaels and I figured this would be the perfect recipe for them. Also, the muffin topper is actually a straw from the Target dollar spot that I cut in half. They have a really great selection of spring and Easter goodies!

- 1 1/2 cups flour
- 1/2 cup brown sugar
- 2 tsp. baking powder
- 1/4 tsp. baking soda
- 1/4 tsp. salt
- 1 tsp. cinnamon
- 3/4 cup milk
- 1/3 cup butter melted and browned
- 2 eggs
- 1 tsp. vanilla extract
- 1 Tbsp. sugar
- 1 Tbsp. brown sugar
- 1 1/2 tsp. cinnamon
- 2 Tbsp. sugar
- 1/4 cup brown sugar
- 1/2 tsp. cinnamon
- 1/4 tsp. salt
- 3/4 cup flour
- 1/4 cup unsalted butter melted and browned

- Preheat oven to 375F and line a 12-cup muffin pan with paper liners. Set aside.
- In a large bowl, whisk together the flour, brown sugar, baking powder, baking soda, salt and cinnamon.
- In a large liquid measuring cup, whisk together milk, butter, eggs and vanilla. Add to dry ingredients and mix until batter is smooth. Fill muffin cavities 1/3 of the way full.
- To make the cinnamon-sugar mixture, mix the sugar, brown sugar and cinnamon together in a small bowl. Add about 1 tsp. on top of the batter in each muffin cavity. Top with remaining batter until they are about 3/4 full.
- To make the crumble topping combine dry ingredients with a fork. Add melted butter and mix until crumbly. Put a heaping tablespoon on top of the muffin batter.
- Bake for about 17 – 20 minutes, until crumble is golden brown and a toothpick inserted into the middle comes out clean. Remove and let cool.
