Coffee Popsicles with Chocolate Drizzle & Hazelnuts

If you’ve been watching my Instagram stories, you have probably noticed that I’m in Chelan, Washington with my family this week. The 90 degree weather over here used to feel really hot to me when I was still living in Seattle, but after 4 years in Las Vegas anything under this feels somewhat cool. However, yesterday we spent all day in the sun and I was ready for a refreshing treat by the time we got home from the lake. I’ve been all about ice cream, popsicles and cold brew coffee lately, so I figured why not combine a couple of my favorite things? Thus iced coffee popsicles were born! I used this caramel iced coffee and froze it in a popsicle mold, then drizzled it with dark chocolate. Last but not least—hazelnuts! These add some texture and complement the caramel flavor. You only need a few ingredients to make this cool treat and a caffeine boost after a long day doesn’t hurt either!   1. Pour iced coffee into popsicle mold. The mold I use has a cover with spots for the popsicle sticks. If yours doesn't, freeze the popsicles for about 30 minutes, then add popsicle sticks so that they will stay in place.
  2. When the popsicles are completely frozen, place a baking sheet in the freezer for about 10 minutes, then remove and cover with parchment paper. Remove and place popsicles onto prepared baking sheet. Drizzle with melted dark chocolate (I found that it's easiest to transfer the melted chocolate to a piping bag, and cut a small hole at the tip). Sprinkle with hazelnuts. Serve immediately.
Recipe Notes
  1. I used this caramel iced coffee, which was already mixed with milk, heavy cream, cane sugar and natural flavor. If you are using home brewed coffee make sure to flavor it to your liking before pouring into popsicle mold.
