When the temperatures increase outdoors, the amount I bake typically decreases. Who wants to be by a hot oven when the house is warm enough as it is?! Instead of making brownies or cookies for dessert when friends come over I typically serve ice cream in the summer. To dress up this tasty treat, I like to create my own dipped ice cream cones. This is an easy way to make it look like you put a lot of effort into the dessert even though it only takes a few ingredients ;) You could also turn this into an ice cream bar and let your guests make their own. Both kids and adults would love to see this at a summer BBQ or pool party! First, pick a bowl or cone—I typically use sugar cones, cake cups or waffle bowls. Then dip it into melted chocolate or vanilla candy coating. I added pink food coloring to one of the bowls, but you can get creative with the colors to match your party décor! Once they are coated, shake off any excess and sprinkle on the desired toppings. For these cones I used crushed pretzels, rainbow sprinkles, mini marshmallows, chopped nuts and crushed chocolate chip cookies. They look really cute displayed in white ramekins if you’re creating a dessert bar. Now it’s time to add the ice cream! Sometimes I’ll make it from scratch (like with this chocolate brownie recipe), but most of the time I get Dreyer’s Slow Churned Caramel Delight light ice cream. It’s flavorful and creamy, but has half the fat and 1/3 less calories than full fat ice cream. Plus it’s made with wholesome ingredients (non-GMO and no artificial colors or flavors). It complements these dipped ice cream cones perfectly! The dark chocolate-dipped cone sprinkled with crushed pretzels is one of my favorite combinations with this ice cream because it creates the perfect balance of sweet and salty!

- In separate, microwave-safe bowls, melt the chocolate and/or candy coating. I like to use dark chocolate melting wafers and a bar of vanilla candy coating. If you'd like to create different colors, pour some of the vanilla candy coating into a separate bowl and mix in the food coloring.
- Dip the cone into the melted chocolate/candy coating. Shake off any excess.
- Sprinkle the cone with desired topping. You could also dip it directly into the topping bowl.
- Scoop 1/2 cup of ice cream onto the cone. Enjoy!
