It’s almost Cinco de Mayo and of course you need a dessert if you’re throwing a fiesta! Dulce de Leche is always a festive flavor, so I decided to use it for an ice cream recipe! It’s supposed to be 95 degrees here on Friday, so this cool treat and a margarita (or two) will be necessary! As long as you have an ice cream maker (we have the older version of this Cuisinart one), this recipe is really easy to make. An ice cream maker might seem like a frivolous purchase, but it’s amazing how much we use ours. My mother-in-law gave it to us for Christmas and I thought it might be one of those gifts that just collects dust, but we have definitely put it to good use! The chocolate Thin Mint brownie flavor has been one of my favorites, but I’m definitely adding this Dulce de Leche ice cream to the list! It’s nice and creamy and has a delicious caramel flavor. I think it would be really good served over these Mexican chocolate brownies!

- 2 cups whole milk
- 1 cup heavy cream
- 1 can (13.4 oz.) dulce de leche
- 1/2 tsp. pure vanilla extract
- 1/4 tsp. sea salt
Ingredients

- In a heavy saucepan over medium heat, bring the milk and heavy cream to a boil. Reduce heat and simmer for about 5 minutes. Remove from heat and whisk in most of the dulce de leche (save a few ounces to swirl into the ice cream) until dissolved, then whisk in vanilla and salt. When it has cooled to room temperature cover with cling wrap and place in the fridge for a few hours until chilled.
- Pour the cold mixture into the frozen bowl of an ice cream maker. Churn for about 20 minutes, until thick and creamy. Stir in remaining dulce de leche. Transfer to a freezer-safe container and freeze for at least one hour.
