Otherwise breakfast in bed is always a nice treat and what mom doesn’t like homemade cinnamon rolls?! Even if you’ve never made cinnamon rolls before, I’m pretty sure you could successfully execute this recipe. This was my first ever attempt at baking this gooey, delicious breakfast item and it turned out really well! I followed this recipe from Katiebird Bakes, but made some tweaks here and there. For starters, I halved the recipe since eight cinnamon rolls was plenty for us. And when it called for melted butter I browned it over the stove to get that nutty flavor. Cream cheese frosting is also a necessity when it comes to cinnamon rolls. When I was little my family would go to the food court at the mall for dinner sometimes and my sister and I would get Cinnabon with extra frosting. Like a regular Cinnabon doesn’t have enough calories?! I guess those were the good old days when we didn’t care about nutrition labels. My mom will probably cringe at the fact that I’m sharing this since she is such a health nut now. I eat pretty healthy now, too (minus taste testing these recipes!) so these homemade cinnamon rolls were a real treat!

8 cinnamon rolls

- 1 cup whole milk
- 1/4 cup canola oil
- 1/4 cup sugar
- 1 1/8 tsp. active dry yeast
- 2 1/4 cup flour
- 1/4 tsp. baking powder
- 1/4 tsp. baking soda
- 3/4 tsp. salt
- 1/4 cup butter melted and browned
- 1/2 cup brown sugar
- 2 tsp. ground cinnamon
- 2 oz. cream cheese room temperature
- 2 Tbsp. butter room temperature
- 1/2 tsp. vanilla
- 1/4 tsp. lemon juice
- 1/2 cup powdered sugar
- 1/8 tsp. salt
- 1/2 Tbsp milk optional

- In a large pot combine milk, oil and sugar. Heat over medium until just before boiling. Turn off heat and let cool until it reached about 110 degrees (it will be just warm to the touch). Sprinkle yeast on top and let sit for 1 – 2 minute. Add 2 cups of flour and stir with a wooden spoon until combined.
- Cover with plastic wrap and let sit for 1 hour to rise. You can either leave it on the stove (with the oven on if your house is cold) or place it in a warm area of your house. The dough should double in size.
- In a small bowl whisk together remaining 1/4 cup of flour, baking powder, baking soda and salt. Add to dough and stir with a wooden spoon until combined.
- On a lightly floured surface, roll out the dough until you have a 12" x 8" rectangle. Evenly spread the browned butter over the dough. Sprinkle with brown sugar and cinnamon.
- Starting with the long edge farthest from you, roll the dough towards you until it is tightly coiled and the seam is facing down. Use a sharp knife to cut it into 8 even rolls. Place in a greased 9" round cake pan.
- Preheat oven to 375F and let cinnamon rolls sit on the counter for about 20 minutes, until they have slightly risen. Then bake for about 20 minutes until golden brown on top. Start on the cream cheese frosting while they bake because you'll want to put it on while the rolls are warm.
- In the bowl of a standing mixer, beat the butter and cream cheese on medium speed until light and fluffy.
- Add one cup of powdered sugar, the vanilla, lemon juice and salt. Mix until combined. Add milk if it's too thick.
- Use a rubber spatula to frost the cinnamon rolls while they are warm, then serve! Enjoy :)
