I figured this Key lime pie recipe would be the perfect way to announce that we are moving to FLORIDA! My husband, Rob, is in the Air Force and we have lived in Las Vegas for four years now, so it’s time for a new adventure! In July we will be packing up and driving across the country to our new home in Destin, Florida. Goodbye desert, hello white sand beaches! When Rob called me one afternoon with the news I immediately Googled it and was in awe of the gorgeous coastline. It’s unlike anywhere I have lived before (okay, that’s only Seattle and Vegas so I don’t have too much to compare it to haha). If you’re unfamiliar with the area like I am, Destin is in the northwest part of the state, also known as the Panhandle. I’m not looking forward to humidity, bugs and hurricanes, but I can’t wait to explore new cities, try all of the fresh seafood and see those beautiful sunsets.
Of course one of the first things I researched about our new home was the food and thankfully there are some delicious-looking bakeries nearby! Apparently Key lime pie is one of the items that Florida is most known for, so I figured I’d better give it a try before moving there. I’m usually more of a chocolate dessert person, but this citrusy treat is perfect for those hot summer days! It’s really light and refreshing and I decided to make them into bite-sized desserts. You can either make them with shortbread tartlet shells (I found these in the baking aisle at Smith’s) or with a homemade graham cracker crust. I couldn’t decide which way I liked better, so I figured why not share both!? Hope you enjoy the recipe and I’m excited to share this new chapter of our lives with you guys!

- 1 14 oz. can sweetened condensed milk
- 8 oz. cream cheese room temperature
- 1/2 cup key lime juice
- 2 tsp. lime zest
- 2 cups graham cracker crumbs
- 1/2 cup butter melted
- 2 Tbsp. sugar
- 2 boxes 1.75" shortbread tartlet shells

- If you are going to make the graham cracker crust, preheat the oven to 325F. Grease a mini muffin pan with cooking spray. In a large bowl, mix together the graham cracker crumbs, butter and sugar. Add about a tablespoon to each muffin cavity. Use the back of a small measuring spoon to pack in the mixture, leaving an indent in the middle. Bake for about 7 minutes, then let cool completely.
- In the bowl of a standing mixer with the whisk attachment, combine the sweetened condensed milk and cream cheese. It's important that the cream cheese is at room temperature because otherwise the mixture will be lumpy. Add lime juice and zest and continue mixing until smooth.
- Transfer to a piping bag fitted with a medium-sized round attachment or just cut the tip. Evenly distribute into the cooled crust or tartlet shells. Refrigerate for about two hours and serve cold.

I’m in heaven Jamie- I love key lime tarts! When I was younger I had a friend whose mom would buy me some on occasion and they were so delicious. I am definitely going to make some of these with my Mom over the summer =’) Congrats on Destin! I visited there once and loved it. Beware of the lizards!
