Happy first day of March! I don’t know where this year is going, but I’m okay with that because I have a lot to look forward to this spring: my friend’s bachelorette party in Palm Springs, a wedding in Connecticut and hopefully finding out where my husband’s next assignment will be. Since St. Patrick’s Day will be here before you know it, I decided to share a festive treat today! Mint and chocolate is always a winning combination in my book and I’ll take any excuse to buy a box of Oreos. I never let myself purchase them unless I need them for a recipe. Although it might seem like my diet is 100% sugar if you look at my Instagram, I try to eat healthy outside of testing desserts for the blog. However, these truffles were hard to resist. I’ve been eating one after every meal this week. They are really easy to make and don’t require many ingredients. Just mix the cookies, cream cheese and peppermint extract in a food processor, then roll them into balls once the ‘dough’ has hardened. To add some green for St. Patrick’s Day I mixed some food coloring into the candy melts before dipping the truffles. And to make them look kind of like a pot of gold I topped them with gold sprinkles. If you’re hosting a St. Patrick’s Day party, they pair perfectly with a chocolate martini (I used this recipe)! And if you need an easy way to add some green to your outfit just toss on one of these mini party hats that I found in the dollar spot at Target. Cheers!

about 30 truffles

- 1 package mint oreos
- 8 oz. cream cheese room temperature
- 1/4 tsp. peppermint extract
- 12 oz. white chocolate chips or white melting wafers
- green food coloring
- gold sprinkles
Ingredients

- Place Oreos in food processor and pulse or mix until you have fine crumbs. Add dollops of cream cheese (not just the entire brick) and mix until smooth. Pour in peppermint extract and process until combined.
- Place dough into a medium-sized bowl. Cover and refrigerate for at least 2 hours, until it's firm enough to roll into balls.
- Once firm, roll into 1 1/2 inch balls. Place in the refrigerator for another hour or put them in the freezer for about 10 minutes before dipping.
- In a microwave-safe bowl, melt white chocolate chips or melting wafers stirring every 30 seconds. Once smooth, stir in food coloring.
- Cover a baking sheet with wax paper and set aside. Using a toothpick or preferred method, dip cookie balls into the white chocolate. Gently shake off excess and place on prepared baking sheet. Quickly add sprinkles, then repeat. I find it easiest to take 5 – 7 out of the fridge/freezer at a time so that they aren't too soft by the time you reach the last few.
