I’ve been thinking a lot about my blogging goals for 2017 lately and trying to get organized before the new year starts. One thing that I want to focus on is finding my niche and what makes my blog unique in a saturated sea of lifestyle bloggers. After reflecting on what posts I am most passionate about and thinking back to why I started this blog, I’ve narrowed it down to affordable fashion and baking—so literally “Treats and Trends.” In the past year fashion has been the primary topic, but I want to bring back more recipe posts, too. My favorite part isn’t just making (and eating) delicious desserts, but it’s also the cute cake stands, copper utensils and other stylish items that go along with baking. So instead of being all over the place with beauty, travel, DIY projects, random thoughts, etc. I’m going to hone in on these two categories. I hope you’re as excited about this new vision as I am! To kick off this new chapter for Treats and Trends and to celebrate the holiday season, I’m sharing a recipe for pink champagne cupcakes! This was one of the three flavors that Rob and I had at our wedding, so I decided to recreate it for a festive treat. The champagne flavor is definitely there, but not overpowering. I added it to both the cake and the frosting so you get a hint of the bubbly drink in both. As for the cake, it’s very moist because of the sour cream and a little more dense than some of my other recipes. They would make a great New Year’s Eve dessert, especially with these cute cupcake toppers that I found at HomeGoods! The pink and gold is right up my alley, plus the party-themed words are perfect for this time of year. A dusting of gold sprinkles complements them perfectly and adds that extra bit of sparkle that NYE requires! I mean who wouldn’t want to toast 2017 with pink champagne cupcakes? Cheers!

- 1 2/3 cups flour
- 1 cup sugar
- 1/4 tsp. baking soda
- 1 tsp. baking powder
- 3/4 cup salted butter
- 3 egg whites
- 1 tsp. vanilla extract
- 1/2 cup sour cream (you can use light)
- 1/2 cup pink champagne
- 1/2 cup unsalted butter
- 1/2 cup shortening
- 4 cups powdered sugar
- 1/4 cup pink champagne

- Preheat oven to 350F. Line cupcake pan with baking cups and set aside.
- In a large mixing bowl, whisk together flour, sugar, baking soda and baking powder.
- In the bowl of a standing mixer, beat butter on medium until light and fluffy. Add egg whites, vanilla extract and sour cream and mix until combined (start slow so that it doesn't slosh out of the bowl). Add dry ingredients and mix on medium until fully incorporated. Be careful to not over mix.
- Fill cupcake liners slightly more than halfway with batter. Bake for 15 – 20 minutes, until a toothpick comes out clean. Let cool for a few minutes in the pan, then transfer to a cooling rack.
- In the bowl of a standing mixer, beat the butter and shortening on medium until light and fluffy.
- Add 2 cups of powdered sugar and mix until combined. Then add champagne and mix until smooth.
- Add remaining 2 cups of powdered sugar and mix until you reach the desired consistency. Add more champagne or powdered sugar if needed.
- Use a pastry bag with an open star tip to frost the cupcakes. Sprinkle with gold frosting if desired.
These look delicious! Also – totally feeling you on the niche, I’ve only just started blogging (well I keep starting and then stopping) but already I feel torn about which direction to go in and what my focus should be. Great post!
