I know it’s still early, but do you guys have any 4th of July plans yet? Rob and I will be in the midst of moving and traveling, so we will probably have a low key Independence Day. Regardless of how we celebrate, I always make sure to bake something festive! Last year I made patriotic brownies and Rice Krispies treats, which were both a hit at the pool party we went to. In preparation for this summer’s festivities I gave these red, white and blue funfetti cupcakes a test run last week and they are definitely keepers! I used the easy homemade funfetti cupcakes recipe from Sally’s Baking Addiction, but mixed in red, white and blue sprinkles. These moist, flavorful cupcakes were really easy to make and remind me of a firecracker! I baked them in festive paper cups, which I found at Michaels. The sophisticated pattern and cute scalloped edges make them perfect for a 4th of July party! They are slightly larger than regular cupcake liners, so the recipe will yield about 9 cupcakes instead of a dozen. Once the cupcakes cooled I topped them with a simple almond buttercream and more sprinkles. The cupcake toppers are from the dollar spot at Target—this is where I find a lot of my baking accessories, like the cake toppers on this cookies and cream cake. It might seem backwards, but a lot of my recipes are inspired by cute cake toppers, liners or other dessert décor.   1. Preheat oven to 350F. Line muffin tin with paper liners or place paper baking cups onto a baking sheet. Set aside.
  2. In a medium bowl, whisk together flour, baking powder, baking soda and salt. Set aside.
  3. In a large microwave-safe bowl, melt the butter. Whisk in the sugar (mixture will be gritty) then chill in the fridge for 2 minutes. Remove and stir in the egg, sour cream, milk and vanilla extract until combined. Gradually add in dry ingredients and stir until no lumps remain. Gently fold in the sprinkles, but don't over mix because the colors will start to bleed. Divide evenly among cupcake liners (makes a dozen normal cupcakes or 9 with the larger baking cups).
  4. Bake for about 20 minutes (or more if they are larger), until a toothpick comes out clean. Let cool.
For the buttercream
  1. In the bowl of a standing mixer with the paddle attachment, beat the butter on medium speed for about 3 minutes until smooth and creamy. Turn off mixer and add powdered sugar, heavy cream, almond extract and salt. Mix on low for 1 minute, then increase the speed to medium-high and mix for an additional 2 – 3 minutes. Frost cooled cupcakes and sprinkle with additional red, white and blue sprinkles.
