A couple weeks ago I went to Lake Chelan with my husband, sister and parents. The last time my whole family was here was about seven years ago, but we used to visit this gorgeous Washington lake every summer when I was growing up. I had such a fun time showing this special place to my husband! We rented a house with a lake view, enjoyed the beautiful wineries and ate at our favorite restaurants. It was the perfect summer vacation—warm, relaxing and no set schedule! We would wake up without an alarm and then decide what we wanted to do that day. I was usually the last one up, so by the time I wanted breakfast everyone else was already fed and anxious to get going. For a quick morning treat I would make a single serving of cinnamon coffee cake with the new Duncan Hines® Perfect Size for 1® cake mix. It was easy to whip up before heading down to the lake and it’s always nice to start the day with a warm, fresh-baked breakfast. You just pour the mix and water into a mug, stir until smooth and microwave it for about a minute. How perfect is that? To personalize it I made my own streusel and cream cheese icing to place on top. This cinnamon coffee cake definitely satisfied my sweet tooth and was really convenient to make. - 1 packet Duncan Hines Perfect Size for 1 Cinnamon Coffee Cake
- 3 Tbsp. water or milk
- 1/4 cup old-fashioned oats
- 1/4 tsp. cinnamon
- 1 heaping Tablespoon brown sugar
- 1/4 cup flour
- pinch of salt
- 1 1/2 Tbsp. unsalted butter melted
- 1 oz. cream cheese
- 1/4 cup powdered sugar
- 1/2 tsp. vanilla extract

- Pour one packet of cake mix into a microwave safe mug (9 – 12 oz. mugs work best). Add 3 Tbsp. water or milk and stir until batter is smooth. Microwave on high for 1 minute and 10 seconds.
- To make the streusel, combine oats, cinnamon, brown sugar, flour and salt in a medium-sized bowl. Add melted butter and use a fork our your hands to combine. It should be somewhat clumpy. Sprinkle over the cooked cake.
- In a small microwave-safe bowl, microwave cream cheese for about 15 seconds. Add powdered sugar and vanilla extract. Stir until smooth, then drizzle over the streusel. Enjoy!
