Strawberry Sugar Wafer Ice Cream Sandwiches

  1. Line a 9″ x 13″ baking pan with parchment paper, leaving several inches of overhang on opposite sides. Set the ice cream out to soften slightly, then use a rubber spatula to evenly spread it into the prepared pan. Place back into the freezer until firm, about 20 minutes.
  2. Once the ice cream layer is frozen, remove from pan and place onto a cutting board. Trim the sides of the ice cream block if needed to create neat, straight edges. Working quickly so that the ice cream doesn’t melt, evenly place the wafer cookies on top with just enough space between each one for a sharp knife. Cut around each cookie and then sandwich with another cookie. Dip the sides into a shallow bowl of sprinkles and repeat until you’ve used all of the ingredients. Place in the freezer for up to 20 minutes to harden or enjoy immediately. If they are kept in the freezer for too long after being assembled, the cookie layers will start to separate.
