No Bake Energy Bites with Homemade Almond Butter

These healthy grab-and-go snacks are the perfect energy booster!

Ingredients

  • 1 cup rolled oats
  • 1/2 cup ground flaxseed meal
  • 1/2 cup mini chocolate chips
  • 1/2 cup almond butter (or preferred nut butter)
  • 1/3 cup honey or pure maple syrup (or a mixture of both)
  • 1 tsp. pure vanilla extract
  • 1/2 tsp. sea salt (if almond butter isn't salted)

Instructions

  1. Add all ingredients to a mixing bowl and stir until combined. Place in refrigerator for 30 – 45 minutes, until it's not as gooey.

  2. Use a cookie scoop or your hands to form 1" balls. Place in a large Ziploc bag or on a baking sheet and freeze until set, about 1 hour. I like to store mine in the freezer and take one out to thaw a few minutes before eating.
