Is there any snack more addicting than gourmet popcorn?? I swear I could eat an entire bag in one sitting. We have a store here in Las Vegas called Popularity that sells delicious air-popped popcorn and it’s dangerously close to our house. They have a ton of flavors and one of my favorites is the cinnamon bun—hence this cinnamon bun popcorn cake recipe! I made a simple cinnamon cake based off of this recipe from Food & Wine and used my favorite mini layer cake pans (I also baked this Samoas-inspired cake with them). The best part of cinnamon rolls is obviously the cream cheese frosting, so I used a generous amount to create this layer cake. The most important thing to remember when making cream cheese frosting is to soften the butter and cream cheese to room temperature before mixing! Otherwise it will be lumpy and that never looks appetizing. When it comes to assembling layer cakes, I find it helpful to use a serrated knife to make sure the top and sides of the cake are level. Then top with a substantial amount of frosting and smooth down the edges with an icing knife. It takes a few spins of the cake to get the edges perfectly smooth, so just be patient (easier said than done, I know). Hope you enjoy this recipe! - 1 1/2 cups all purpose flour
- 1 cup cake flour
- 1 tsp. baking soda
- 1 tsp. baking powder
- 1 tsp. cinnamon
- 1/2 tsp. salt
- 3/4 cup unsalted butter room temperature
- 1 1/2 cups sugar
- 3 large eggs room temperature
- 2 tsp. vanilla extract
- 1 cup full-fat sour cream
- 1/4 cup unsalted butter room temperature
- 8 oz. cream cheese room temperature
- 3 cups powdered sugar
- 1 tsp. vanilla extract
- 1/4 tsp. salt
- 1/2 cup cinnamon bun popcorn

- Preheat oven to 350F. Spray 5 mini cake pans with cooking spray.
- In a large bowl, whisk together the flour, cake flour, baking soda, baking powder, cinnamon and salt.
- In a standing mixer fitted with the paddle attachment, beat the butter and sugar on medium speed until creamy, about 2 – 3 minutes. Add eggs and vanilla, then mix until combined scraping down the sides of the bowl with a rubber spatula as necessary. Add 1/3 of the flour mixture and mix until mostly incorporated. Mix in half of the sour cream. Continue alternating ingredients (flour, sour cream, flour) until fully incorporated.
- Pour batter evenly into prepared pans. Use a spatula to make sure batter is level. Bake for about 25 minutes, until edges are golden brown and the middle is springy. You can also use the toothpick test. Transfer to cooling rack for about 15 minutes, then remove cakes from pans and continue cooling.
- In the bowl of a standing mixer fitted with the paddle attachment, cream the butter and cream cheese on medium speed until smooth and fluffy, about 2 – 3 minutes.
- Gradually add powdered sugar, mixing on low speed. Add vanilla extract, salt and powdered sugar and continue mixing. Increase speed to medium-high for an additional 30 seconds.
- To assemble the cake, place one layer on a plate or cake stand then top with a generous amount of frosting. Continue alternating. I only ended up using three layers of cake. Use an icing knife to smooth the edges, then top with popcorn.
