First of all, this is not a baby announcement! I can’t even commit to a dog yet. I just found this cute cake topper at Target and it inspired me to make a girl baby shower cake. I’ve always wanted to give the ombre cake a try and figured this would be a great excuse! It’s much easier than it looks. You just make one batch of white cake batter and then split it up into five different bowls. Then add a different amount of pink food coloring to each bowl to get the ombre effect. You could actually use any color or create a rainbow, blue would work just as well for a baby boy shower! Once it is colored, pour each bowl of batter into a 6″ cake pan. After they have baked and cooled place the darkest layer on a cake stand and frost (I used the same almond butter cream from this cupcake recipe). Continue adding layers with the lightest color at the top. Ta da! Easy as that :)

- 2 3/4 cups cake flour
- 1 2/3 cups sugar
- 1 Tbsp. baking powder
- 3/4 tsp. salt
- 3/4 cup unsalted butter softened to room temperature
- 4 large egg whites
- 1 large egg
- 1 cup whole milk
- 2 tsp. vanilla extract
- 1 tsp. almond extract
- pink food coloring
- 1 cup unsalted butter room temperature
- 3 – 4 cups powdered sugar
- 1 tsp. vanilla extract
- 1/2 tsp. almond extract
- 1/8 tsp. salt
- 1 – 2 Tbsp. heavy cream or milk

- Preheat oven to 350F. Lightly grease five 6" round pans.
- In the bowl of a standing mixer, whisk together the flour, sugar, baking powder and salt by hand. Add the softened butter and use a wooden spoon to mix in the butter as well as you can. Once it's combined and wet enough so that it won't fly out of the bowl, use the paddle attachment to continue mixing on low until the consistency is similar to wet sand.
- Add egg whites one at a time, mixing between each addition, and then mix in the full egg. Use a rubber spatula to scrape down the sides of the bowl as needed between each addition.
- In a small bowl (or the liquid measuring cup) stir together the milk and extracts. Add to the batter, 1/3 at a time, beating for about 1 minute between each addition. Scrape down the sides and bottom of the bowl and continue mixing until fluffy, about 20 more seconds.
- Evenly pour the batter into 5 separate bowls. Use pink food coloring to create different shades of pink. Add a little bit to the first bowl, then more and more to each bowl thereafter. Pour the colored batter into prepared pans. Bake for 18 – 22 minutes, until a toothpick comes out clean. Let cool in pan for about 10 minutes, then transfer to a wire rack to continue cooling.
- In the bowl of a standing mixer fitted with the paddle attachment, beat the butter until smooth and creamy. Gradually add powdered sugar and continue mixing. Add vanilla and almond extracts, salt and heavy cream. Mix until incorporated. Add more powdered sugar if it's too thin, or more milk if it's too thick.

I love the idea and now I want to make a cake like this for the summer, I’ll have to get those trays from Target, it seems quite easy to make. This is such a cute idea for a cake!! I’ve seen ombré cakes on baking shows before but never thought to make it for myself! I also love how you prefaced this by saying that this isn’t a baby announcement—I can barely commit to a dog too!
