Blueberry Oatmeal Bread

This weekend I had an urge to bake and a craving for carbs! I decided to try out this recipe for blueberry oatmeal bread that I had seen on Pinterest. It did not disappoint! It was easy to make, used ingredients I already had and ended up tasting great! Let’s just say there wasn’t any left by the time Monday rolled around…

Ingredients:

  • 1/2 cup butter (softened)
  • 1 cup granulated sugar
  • 2 eggs
  • 2 tsp vanilla
  • 1 tsp cinnamon
  • 1/2 tsp salt
  • 1 tsp baking soda
  • 1 cup non-fat plain Greek yogurt
  • 1 1/2 cups all-purpose flour
  • 1 cup old fashioned oats
  • 1 cup blueberries (I used frozen, but fresh would be good, too!)

How to make this moist and delicious loaf:

  1. Preheat oven to 350 F; grease and flour 9×5 loaf pan
  2. Cream butter and brown sugar; add eggs and vanilla and mix until creamy
  3. Add cinnamon, baking soda, salt, Greek yogurt, flour and oats; mix until you have a thick batter
  4. Gently fold in the blueberries
  5. Pour into pan and sprinkle with oats
  6. Bake for 70 minutes or until done (check with a toothpick to make sure the middle is baked, but don’t let it burn!)
  7. Cool for 15 minutes, remove from pan and cool on wire rack
  8. Eat it all yourself or share with your friends and family!
