This weekend I had an urge to bake and a craving for carbs! I decided to try out this recipe for blueberry oatmeal bread that I had seen on Pinterest. It did not disappoint! It was easy to make, used ingredients I already had and ended up tasting great! Let’s just say there wasn’t any left by the time Monday rolled around…
Ingredients:
- 1/2 cup butter (softened)
- 1 cup granulated sugar
- 2 eggs
- 2 tsp vanilla
- 1 tsp cinnamon
- 1/2 tsp salt
- 1 tsp baking soda
- 1 cup non-fat plain Greek yogurt
- 1 1/2 cups all-purpose flour
- 1 cup old fashioned oats
- 1 cup blueberries (I used frozen, but fresh would be good, too!)
How to make this moist and delicious loaf:
- Preheat oven to 350 F; grease and flour 9×5 loaf pan
- Cream butter and brown sugar; add eggs and vanilla and mix until creamy
- Add cinnamon, baking soda, salt, Greek yogurt, flour and oats; mix until you have a thick batter
- Gently fold in the blueberries
- Pour into pan and sprinkle with oats
- Bake for 70 minutes or until done (check with a toothpick to make sure the middle is baked, but don’t let it burn!)
- Cool for 15 minutes, remove from pan and cool on wire rack
- Eat it all yourself or share with your friends and family!
