As much as I love trying new desserts and challenging recipes, it’s hard to beat the classic chocolate chip cookie. However I think this bar version comes pretty close. Everyone has different preferences when it comes to chocolate chip cookies. Some like them thin and crispy, others (like myself) like them soft and gooey. What I love most about these bars is that they are thick, gooey and hardly have any edges. I’m that person who usually cuts into the middle of baked goods (like these blondies) because crispy sides aren’t worth the calories ;) These chocolate chip cookie bars are really easy to whip up and you probably have all of the ingredients in your kitchen already. It’s perfect for a dinner party (or just yourself…) because it makes about 20 – 25 bars. If you want to go all out for dessert, I think these would be delicious topped with ice cream and hot fudge

Instructions
  1. Preheat oven to 350F. Line a 9" x 13" baking pan with parchment paper. I cut it so that it's 9" wide and long enough to hang over the other two ends because this makes it easy to pull out of the pan after they are cooked.
  2. In the bowl of a standing mixer, beat butter and brown sugar until creamy. Add eggs and vanilla, mixing until combined. Scrape down the sides and bottom of the bowl with a rubber spatula as needed.
  3. In a separate large bowl, whisk together the flour, baking powder and salt. Gradually add to butter mixture and mix on low or medium-low until combined. Use a wooden spoon to stir the chocolate chips in by hand. Evenly spread into prepared pan.
  4. Bake for about 30 minutes until edges are golden brown and the middle is set. Do not overbake. Let cool, then cut into bars.
