I’ve been really into desserts that are made with cereal ever since trying this delicious soft serve concoction at Recess Italian Ice here in Las Vegas. I couldn’t even tell you the last time I had Fruity Pebbles, but they were even better than I remembered. The nostalgic breakfast item added an amazing flavor and perfect crunch to the ice cream. I also tried the new Fruit Loops milkshake from Burger King since I had a sore throat and that sounded AMAZING. All healthy eating bets are off when a cold comes around, so it was the perfect excuse. It was really tasty and made me feel like a kid again. For today’s recipe I decided to make some frosted sugar cookie bars and top them with Fruity Pebbles. I used this recipe to make 4th of July treats a few years ago, but decided to mix it up by adding pink food coloring and sprinkling with the cereal. My sister was in town for a few days this week, so she was my taste tester for this recipe and said it was “stupid good.” However, she wasn’t happy about being an “Instagram sister” and having to wait for me to take photos before eating them. Hope you like them as much as we did!

- 4 oz. cream cheese room temperature
- 1/4 cup butter room temperature
- 3 cups powdered sugar
- 1/2 tsp. vanilla extract
- 1/2 tsp. almond extract
- 1/8 tsp. salt
- pink food coloring
- Fruity Pebbles
Ingredients
For the frosting

- Preheat oven to 350F. Grease 9" x 9" baking pan.
- In the bowl of a standing mixer, beat butter and sugar until light and creamy. Add eggs, vanilla and almond extract, mixing until smooth.
- In a separate bowl, whisk together flour, salt and baking powder. Gradually add to butter mixture and mix until combined. Evenly spread into pan. Bake for about 25 minutes, until edges are lightly browned. Let cool.
- In the bowl of a standing mixer, cream the cream cheese and butter until smooth. Add powdered sugar one cup at a time and mix until incorporated. Add vanilla and almond extracts, mixing until combined. Scrape down the sides with a rubber spatula as needed. Add food coloring and beat on medium-high for another minute.
- Once cookies are completely cool, frost and sprinkle with Fruity Pebbles. Cut into bars.

These look so delicious! I love fruity pebbles but we don’t have them in Canada which makes me so sad :( I’m seriously considering ordering some online because I think they’re the perfect addition to baked goods.
