Vanilla Almond Cupcakes with Star Decorations

With award season in full swing, I figured some star-studded cupcakes are just what you need while watching the stars on the red carpet. I was looking forward to the Grammy’s and thought it was a pretty good show overall! I was so happy that Maren Morris won Best Country Solo Performance. I’ve seen her live a couple of times and she is so good! Plus she seems so cool and real. And my favorite part of any award show is obviously the fashion. Carrie Underwood looked gorgeous as always and Tim & Faith definitely win the award for most beautiful couple. It will be fun to see what everyone wear to the Oscars in a couple of weeks, too. I’m not much of a movie person, so I usually just watch the red carpet for that one and call it a night. But if you’re hosting a viewing party these vanilla almond cupcakes with star decorations are the perfect sweet treat! I used the recipe for Simply Perfect Vanilla Cupcakes from Sally’s Baking Addiction (one of my favorite baking blogs!), but made a few tweaks. I love adding almond extract to recipes, so I included some in the cupcake batter and the frosting. Her simple recipe will be my go-to from now on because it came out with the perfect texture and dome shape! To decorate them I just piped some almond buttercream on top and added the gold stars from this Meri Meri cupcake kit. You could also dust with with gold-colored sugar for some added sparkle! Enjoy!

Instructions
For the cupcakes:
  1. Preheat oven to 350. Line 12-cup muffin pan with liners. Line three cups of another pan and set aside.
  2. In a medium bowl, whisk together the cake flour, baking powder, baking soda and salt. Set aside.
  3. In the bowl of a standing mixer, beat the butter on high for about 1 minute, until creamy and smooth. Add the sugar and mix on high speed for two minutes. Add the egg whites and extracts, and mix on medium-high until combined, then mix in sour cream.
  4. Gradually add the dry ingredients, mixing on low until it is fully incorporated. While the mixer is still on low, slowly add the milk and mix until combined. If there are any lumps, you can whisk it by hand before pouring batter into the pan.
  5. Use a batter scoop to fill each cup about 2/3 of the way full. Bake for 19 – 22 minutes, until toothpick comes out clean. Let cool in the pan for a couple minutes then transfer to a wire rack to cool completely.
For the frosting:
  1. In the bowl of a standing mixer, beat the butter on medium for about 2 minutes until creamy. With the mixer on low speed, gradually add powdered sugar, heavy cream, extracts and pinch of salt. Once combined, increase to high speed and beat for about 3 minutes. When the cupcakes are completely cool, use a piping bag or icing knife to frost.
