Peanut Butter S’mores Brownie Pie

If you follow any food bloggers on Instagram you probably saw that National S’mores Day was last week. There are a ridiculous amount of silly “holidays,” but this is one I fully support! It’s hard to beat a summer bonfire with fresh s’mores! This was one of my favorite activities on our annual vacations to Lake Chelan when I was growing up. We never had campfire (my family isn’t very outdoorsy), so we would roast the marshmallows over the barbecue at the house we were renting. Sometimes we would substitute the classic chocolate bars for peanut butter cups, which is also a delicious combo and the inspiration for this recipe!

Chocolate and peanut butter is always a good idea. So why not combine it with another classic combo—s’mores! First I started with a store-bought graham cracker crust because they are just SO easy. Then I used the Kodiak Cakes brownie mix and swirled in some creamy peanut butter. If you aren’t familiar with Kodiak Cakes, I highly suggest you check out their products! They are made with 100% whole grains and packed with protein, plus they taste great! I’ve also tried their pancake and waffle mixes, which are delicious! The cinnamon oat flavor reminds me of a cozy, fall morning in the gloomy Pacific Northwest. Can you tell I’m over this summer heat? ;) Okay back to the pie. When the brownie layer is almost done baking, top it with the marshmallows and bake for a few more minutes. To get them golden brown on top, I broiled them on high for about 30 seconds. The result? Ooey, gooey and delicious! The pie is best served at room temperature or microwaved for a few seconds so that the marshmallows are nice and fluffy again. Peanut Butter S'mores Brownie Pie

Ingredients

  • 1 graham cracker pie crust
  • 1 1/4 cups Kodiak Cakes brownie mix
  • 1 large egg
  • 1/4 cup butter melted
  • 1 Tbsp. vegetable oil
  • 1 Tbsp. water
  • 3 Tbsp. creamy peanut butter
  • 30 – 40 jet puffed marshmallows

Instructions

  1. Preheat oven to 350F. 

  2. Combine brownie mix, egg, butter, oil and water in a mixing bowl and stir by hand until blended. Pour into pie crust. Drop dollops of peanut butter on top and then use a spatula to swirl it into the brownie batter. Bake for 20 minutes, until a toothpick inserted into the middle comes out with just wet crumbs. 

  3. Top with marshmallows. Bake for an addition 3 minutes and then broil until they are golden brown. Remove and let cool on a wire rack. It's best to served after an hour or two out of the oven, but if you do serve it later I suggest microwaving your slice for a few seconds to get the marshmallows nice and fluffy again!
